Ingredients
1 cup Tarhana Dry Soup Mix (recipe at Fairies’ Cuisine)
8-9 cups water (or adjust based on preferred consistency)*
⅓ cup olive oil
⅓ cup pepper (or tomato) paste
1 tbsp salt
For Butter and Mint Dressing (Optional):
100 g butter
1 tbsp dried mint
8-10 seasoned bread croutons

*For a creamier consistency, you can substitute water with milk
**You can also add the dry mix directly into the pot, but soaking ensures a smoother texture.

Directions
PREPARATION
Soak the Tarhana (Optional):
In a small bowl, soak 1 cup of Tarhana mix in 1 cup of drinking water for 10-12 minutes to help dissolve it and prevent lumps in the soup**.
COOKING
Start the Base:
In a deep pot, heat ⅓ cup of olive oil with ⅓ cup of pepper or tomato paste and stir for 1-2 minutes to release flavors.
Add the Tarhana:
Add the soaked Tarhana mix into the pot, stirring constantly until the mix is fully dissolved.
Gradually add the remaining 7-8 cups of water and 1 tbsp of salt.
Smooth the Soup:
Use a whisk or hand blender to eliminate any lumps before the soup begins to boil. Stir until the soup boils.
Once boiling, reduce the heat to low and simmer for 5 minutes. Turn off the stove.
OPTIONAL BUTTER AND MINT DRESSING
While the soup simmers, melt 100 g of butter in a small pan over medium heat. Stir in 1 tbsp of dried mint and let it infuse the butter for 1-2 minutes. Drizzle the sizzling dressing over the soup for a crisp, satisfying, and aromatic touch.
