Since chicken and turkey have become easily accessible, they've become classics in our evening meals. In my childhood, poultries were rarely cooked more than a few times a year, and when they were, it was always a festive occasion with our extended family. Even today, cooking a whole chicken or large pieces of turkey still evokes a feast-like feeling for me, and I believe it deserves to be celebrated properly.

Whether you choose chicken or turkey, whether you roast them whole or in smaller pieces, using these spices and homemade sauce will surely treat your family to a delightful feast. Adding vegetables and rice to the menu will enhance both the flavor balance and nutritional value even more.

Roasted Turkey Drumsticks With Homemade Barbecue Sauce

Ingredients

  • 6 turkey drumsticks

  • 2 tbsp paprika

  • 1 tbsp ground black pepper

  • 1 tsp ground fennel seeds

  • 1 tbsp salt

    The Barbecue Sauce:

  • 200g sugar (white or brown)

  • 200g ketchup

  • 300 ml orange juice

  • 4 tbsp Worcestershire sauce

  • 4 tbsp balsamic vinegar

  • 2 tsp mustard

  • 1 tsp Sriracha (or hot pepper) sauce

  • 1/2 tsp salt

Keep some of the barbecue sauce for serving. It’ll be a favourite sauce for everyone.

Directions

PREPARATION
Thoroughly wash and dry the Turkey Drumsticks.
Using a sharp knife, make 2-3 slots on each thigh for better heat penetration and even roasting.
Mix the paprika, black pepper, ground fennel seeds, and salt to make the dry rub.
Thoroughly coat the drumsticks with the rub; try to apply it as deeply as possible.
Cover the drumsticks with parchment paper so they can properly cook without burning the oven. This will also keep them juicy for as long as possible.

ROASTING
Set the oven to 380 F (or 190 C) and roast the covered drumsticks for 90 minutes. Meanwhile, prepare the Barbecue Sauce

BARBEQUE SAUCE
In a deep saucepan, pour 200 g of sugar, 200 g of ketchup, 2 tbsp of mustard, 1 cup of orange juice, 4 tbsp of Worcestershire sauce, 4 tbsp of balsamic vinegar, 1 tsp of hot pepper sauce, and ½ tsp of salt.
Bring the ingredients to a boil on medium heat.
Cook the sauce for 20-25 minutes, until it thickens to a glaze-like consistency.
Take the Barbecue Sauce off the heat and let it cool down to room temperature.

GLAZING AND ROASTING
Once the Turkey Drumsticks are thoroughly cooked (after ~90 minutes in the oven), it is time to apply the first coat of BBQ Sauce.
Take the drumsticks out of the oven, remove the parchment and brush them with a generous amount of BBQ Sauce.
Return the glazed drumsticks back into the oven and bake them uncovered for another 15-20 minutes. If you’d like, you can apply 1-2 more layers of sauce (remember to bake 5-10 minutes between each layer).
Once the sauce caramelizes and drumsticks turn to brown, the baking process is completed. It is time to serve!!

(!) For future reference, you can confidently serve all types of poultry meat with this sauce and seasonings!
