Menemen: A Flavourful Egg Dish
Story of Menemen
MENEMEN is a style of Turkish scrambled eggs with a Mediterranean essence. The name comes from a small town located to the north of Izmir (Smyrna), Turkey. Its fresh and hearty taste make Menemen an easy favourite not only for breakfast, but also for a light lunch and dinner to the humble residents of Aegean Shores and Istanbul!!
It is a tasty and nutrition-rich egg-dish harmoniously bring together sun-rised tomatoes, peppers, and fresh parsley in the summer, where the vegetables have perfect taste and conditions.

Here are the ingredients and tips for cooking a creamy Menemen in 20 minutes.
Ingredients
300 g Tomatoes (I recommend meaty Roma Tomatoes)
100 g Peppers (any kind you like)
3 eggs
3-4 sprigs fresh parsley
2-3 tbsp olive oil
½ tsp salt
Notes from the Kitchen
Menemen is easy and very tasty sunrise starter. You may separate the egg whites if you like creamy taste of egg yolks, or follow the directions carefully.
Based on your preference, you may stir a shallot, garlic, before adding the vegetables and also add some mozzarella as a last touch of the dish.

PREPARATION
Discard the seeds and stems of the peppers, then, chop into small pieces, set aside.
Skin the tomatoes, then dice and set aside. (You can also use a canned diced tomato for convenience)
Discard the excess stems, mince the parsley, and set aside
COOKING
Pour 2-3 tbsp of olive oil into a pan.
Add the chopped peppers and stir for 2 minutes on medium-high heat.
Add the diced tomatoes, stir for 8-10 minutes.
Create an opening in the center of the pan to quickly evaporate excess juice of the vegetables.
(!) less juice means a tasteful Menemen with a more mature consistency.
Once the vegetables soften and the excess juice evaporates, add ½ tsp of salt.
Nestle 3 eggs into the center of the pan.
Gently stir the egg whites while keeping the yolks whole.
When the egg whites are cooked, scramble them with the yolks and immediately turn off the stove for a perfect creamy texture.
Then, combine the vegetables with the eggs and sprinkle the minced parsley over the dish.
Menemen is ready for serving!

Serve Menemen freshly! Menemen is a favourite breakfast course in Turkish Cuisine. You can garnish it with your favourite spices, cheese, onion, and garlic.
