Story of gourmet root vegetables

Celeriac is among the lesser-known vegetables. At our home, we have a tradition of making such vegetables appealing to children by sweetening them with fruits, adding beloved spices, and presenting them in an enticing manner. This way, diversifying nutrition from a young age becomes a regular practice.
Considering this perspective, I recommend including Celeriac with Orange dish in your menu. It's definitely worth the effort, especially to delight children.
The addition of orange and lemon juices, along with the valuable minerals dissolved in olive oil from the carrots, enhances both the flavour and visual appeal. In my opinion, any meal that looks appetizing and smells delicious is not only tasty but also nutritious!

CELERIAC WITH ORANGE: A savoury, citrusy, and gourmet vegan recipe

Ingredients

  • 2 small-sized (~900 g) Celeriac roots

  • 1 large (~400 g) iri potato

  • 1 large (~300 g) onion

  • 2-3 small (~120 g) carrots

  • 3 medium-sized (~760 g) oranges

  • 1 1/2 lemons

  • 1/2 cup olive oil

  • 1 tbsp sugar

  • 1 tsp salt

  • 1 cup water

*Sautéing carrots extra nutrition and beautiful colour for your dish. Beta carotene becomes more active when it meets oil and heat.

**Celeriac and potatoes turns brown when their skins are peeled. Lemon juice prevents oxidation and keeps them white.

Directions

PREPARATION
Thoroughly wash the vegetables and fruits.
Fill a large bowl with ~3 lit water, then add the juice of ½ lemon. This water-lemon solution will work for preventing the vegetables from browning during preparation

PREPARING THE LIQUIDS
Squeeze the juice of 1 lemon and 1 orange, discard the pulps and set aside. (Complete the orange juice to a cup of liquid adding water if necessary.)
Grate a carrot coarsely, then sauté it with ½ cup of olive oil (*). Although, take care not to burn the carrots.
Once the carrots release their colour, strain, and set aside the carrot-flavoured oil.
These three liquids are essential for achieving an outstanding aroma, and a beautiful colour palette on your plate.

PREPARING THE VEGETABLES
Thinly dice the onion, set aside.
Peel the potato and slice it into 0.5 cm thick pieces. Give the slices cute shapes and submerge them in the lemon-water solution to prevent browning. You can use remaining smaller pieces for soups or a pastry filling. Decorating vegetable dishes helps increase demand from children. So, I recommend getting creative with the presentation to make this dish unique and wonderful!
Slice the celeriac roots into ~2 cm thick steaks, discard the darkened outer layer.
Cut the celeriac steaks into bit-sized triangles and submerge them in the lemon-water solution(**).
Peel the carrots slice them into 1 cm thick circles, set aside.
Remove the zest of the remaining 2 oranges to avoid excess bitterness. Then, slice them into 0.5 cm thick circles, set aside

COOKING
Pour the carrot-flavoured oil you made into a large and shallow pot.
Add the diced onions and carrots, then stir for 2-3 minutes on medium-high heat.
Place the celeriac roots, potatoes, and orange slices (in that order to provide evenly cooking) into the pot.
Pour in the juice of 1 lemon, 1 cup of orange juice, and 1 cup of water, then sprinkle 1 tsp of salt and 1 tbsp of sugar over the vegetables.
When the boiling begins, lower the heat to the minimum setting and cook for 35-40 minutes, until all the vegetables become very tender.
Turn off the heat and let the pot cool down to room temperature.

SERVING
Serve this gourmet celeriac root dish at room temperature or chilled.
Here’s one serving idea; make a nest of orange slices, place the celeriac pieces over them. Decorate with potato and carrot slices. Finally, drizzle some of the delicate citrusy juice of the dish over the plate.
