Almond Cookies are soft and chewy in texture, white, flaky, and powdery on the surface, nutty and citrusy in taste, festally and happily on celebrations!

Homemade Almond Cookies: Soft, sweet, pleasant…and GLUTEN FREE happiness

Ingredients

For the dough:

  • 3 cups almond flour (~300 g) *

  • 3 egg whites

  • 1 cup (~200 g) sugar

  • 1 tsp vanillin

  • ¼ tsp salt

  • Zest of 1 orange (or 1 tbsp almond extract)

For decoration:

  • 1-2 cups icing sugar

  • ½ cup whole almonds

  • 2-4 tbsp orange marmalade**


Notes from the Kitchen

(*) How to make #almondflour #fromscratch at home? Easy! Add blanched almonds to a blender and blitz until a fine, powdery flour is achieved. Be careful, if you go too far, mixture turns to an almond butter.

Directions

THE DOUGH
Finely grate the skin of 1 orange, set aside
Bring the eggs to room temperature, separate the egg whites. (Keep the yolks in the fridge for later recipes).
Whisk the egg whites and ¼ tsp of salt for 1-2 minutes, until the mixture becomes frothy.
Add 1 cup of sugar and continue whisking for 5-6 minutes, until the sugar is melted.
Add 3 cups of almond flour, the grated orange zest, and 1 tsp of vanillin extract
Combine the ingredients using a spoon.
Once the mixture becomes homogenous, form a smooth dough, cover the dough with a lid and left rest in the fridge for at least 1 hour (or overnight) for an easy shape-giving process.

FORMING
Pour a cup of water in a bowl and wet your hands from time to time to avoid stickiness if necessary.
Using a spoon, portion the dough into walnut-sized pieces, then roll into small balls.
Place 1-2 cups of icing sugar into a large bowl, coat the cookies with icing sugar.
(!) use a clean spoon and the side of the bowl to press a thin layer of sugar onto the cookies.
Then, place them onto the oven tray, leaving some space between the cookies.
You can stick a whole almond into each cookie or press into their center to make a small crater.
Prepare an oven tray

BAKING
Pre-heat the oven to 380 °F (180 °C).
Bake the almond cookies for 12-14 minutes, until the bottom of the cookies become golden brown.
You will not see a colour change on the top surfaces, so be certain about cooking time!
Let the cookies cool down to room temperature (or eat a couple of them while still soft and warm.
